Ingredients

· 2 spring onions/shallots, trimmed and cut into pieces
· 5 cm piece ginger, peeled
· 50 g oyster mushrooms
· 540 g coconut milk
· 60 g water
· 1 tbsp red curry paste (see Tip)
· 1 tsp fish sauce
· 20 medium-sized raw prawns, peeled with tails intact
· 100 g dried vermicelli rice noodles, broken into halves
· bean sprouts, for garnishing
· micro herbs, for garnishing

 

Preparation

1  Place spring onions/shallots and ginger into mixing bowl and chop 3 sec/speed 7. Scrape down sides of mixing bowl.
2  Add mushrooms, coconut milk, water, curry paste and fish sauce and cook 5 min/100°C/reverse symbol/speed 2.
3  Add prawns and cook 2 min/100°C/reverse symbol/speed 2.
4  Add rice noodles and cook 3 min/100°C/reverse symbol /speed 1. Stir with aid of spatula to ensure even cooking.
5  Divide noodles between serving bowls, then garnish with bean sprouts and micro herbs to serve.
