Ingredients

· 40 g shelled, unsalted pistachios
· 130 g unsalted cashews
· 55 g unsalted peanuts
· 20 g coconut oil
· 20 g desiccated coconut
· 1 tbsp honey
· 3 tbsp cocoa powder
· 35 g pepitas
· 20 g water
· ½ tsp natural vanilla extract
· 65 g pitted dates

Preparation

1  Place pistachios into mixing bowl and chop 5 sec/speed 8. Transfer into a bowl and set aside.

2  Place remaining ingredients into mixing bowl and blend 15 sec/speed 7.

3  Scrape down side of mixing bowl and blend 15 sec/speed 7.

4  Roll 2 tablespoons of mixture into a ball, roll ball in chopped pistachios to coat, then transfer onto a plate or baking tray. Repeat with remaining mixture and pistachios (makes approx. 7 large balls total). Place into refrigerator for 30 minutes to set, then serve.

 

Tips

· You can store your bliss balls for 2 weeks in a sealable container in the refrigerator.
· To make bite-size bliss balls, use 1 tablespoon of mixture for each ball (makes approx. 14 total).
